PopUp Bagels is finally revealing a few more details on where its highly anticipated Miami shops will land. Besides downtown Delray Beach, which is expected to debut sometime in late spring on the same block as the popular Ray Hotel, the bagel and schmear shop that draws hours-long lines in New York City for its fresh New York bagels will open additional shops in Aventura this summer, followed by Brickell in late 2025.

The wild proportions of schmear in fun varieties are part of PopUp Bagels' allure to young fans

A Pop-Up So Popular, It Couldn't Remain a Pop-Up
Before committing to a full-blown South Florida expansion, PopUp Bagels tested the waters with a successful pop-up at the Colony Hotel in Palm Beach in 2024. The temporary shop quickly became a local hotspot, selling out every day. The demand was undeniable, with people raving about the hot, whole bagels straight from the oven and the creative cream cheese spreads."We've always wanted to come to Florida. We love our friends at the Colony Hotel, and that's been great for us, but we really just needed our infrastructure to be bulkier and in place so that we could successfully operate multiple stores in Florida," founder Adam Goldberg told New Times in January 2025.
Now, Goldberg’s team is ready to meet that demand with several new locations across the state. While Delray, Aventura, and Brickell have been confirmed, the exact location within Aventura is still up in the air. However, we do know that the Brickell shop will be located inside the 801 Brickell building, just steps from Komodo.

From Viral Sensation to Soon-to-Be Miami Staple
PopUp Bagels started in 2020 as a backyard operation in Westport, Connecticut, but it didn’t take long for the brand to go viral. What makes PopUp different? The bagels themselves — light, airy, and with a perfectly crisp exterior. No slicing, no sandwiches — just whole bagels (plain, sesame, poppy, salt, and everything) served fresh out of the oven, paired with rotating, over-the-top cream cheese spreads that have kept customers coming back. From collaborations like a Cup of Noodles schmear to garlicky escargot with pastry chef Dominique Ansel, it's the bagel shop that keeps on surprising.Long story short, the concept took off, backed by an $8 million investment round and celebrity investors, including Paul Rudd, Michael Phelps, Michael Strahan, and JJ Watt.
The company currently operates four locations in New York City, four in Connecticut, and two in Boston.
