Brickell's craft cocktail scene is about to get a boost thanks to a new speakeasy in Mary Brickell Village that specializes in unique cocktails inspired by North and South America.

, Brickell’s newest craft cocktail bar, operates more like a quiet temple of mixology than your standard speakeasy. Located on the second floor of Mary Brickell Village, this bar isn’t easy to find — just an unmarked door, a doorbell, and, once you’re let in, a walk up to a sleek, modern space where cocktails are as carefully crafted as they are imagined.

The bar offers a unique blend of Latin American-inspired drinks with a majorly theatrical presentation. “It’s an homage to what the Americas have to offer,” says owner Andrei Stern, originally from Mexico. “In Latin America, we often look outward, to Europe, for what’s best in the food and beverage space. But Panamericano celebrates the spirit of our own continent — quite literally."

Theatrical Cocktails Inspired by North, Central, and South America

His concept has a compelling twist on regional pride, with cocktails made solely from ingredients sourced from North, Central, and South America. Examples of this include vodka from Peru, gin from Mexico, and rum from Belize — just a few of the 150 unique spirits lining the shelves that are used to create cocktails that playfully “Americanize” classic drinks.

These "Americanizations" include drinks like the "Taco Martini," a martini subtly infused with taco flavors and garnished with a miniature taco, and "From Argentina with Love," a highball inspired by Argentina’s beloved poached pear dessert and Malbec. These inventive combinations go beyond clever names. They’re made with methods like sous vide, oil washing, and milk clarification to give each drink a distinct texture and taste.

And that's not all — Panamericano’s menu has another dimension.

Dubbed “ceremonies,” these immersive cocktails are inspired by Latin American rituals that extend beyond just flavor. There’s the "Cacao Ceremony," rooted in Mayan and Aztec traditions, which pairs cacao and corn in a velvety, aromatic foam. For those intrigued by ritual, there’s the "San Pedro Ceremony," a cocktail that arrives with a candle to enhance both the fragrance and flavor, drawing on ayahuasca’s sensory traditions. For those preferring a non-alcoholic experience, the "Water Divination Ceremony" pays homage to the Kogi tribe of Colombia and is served to guests blindfolded, engaging senses beyond sight.

A Sexy Bar Compliments the Mysterious Cocktails

The design of Panamericano is as meticulous as the drinks.

The bar is a T-shaped work of art designed by Norwegian firm Behind Bars with a 39-inch, eye-level work stage, which brings guests up close to the creative action. Inspired by open kitchen concepts, the layout is meant to showcase mixology as performance art, with bartenders moving in sync to craft each cocktail as guests watch. “It’s more than just ordering a drink,” says Stern. “It’s about seeing how it all comes together, from the bartenders’ precise movements to the techniques they use. The bar itself is a stage where the mixology is on full display.”

In addition to its regular offerings, Panamericano is cultivating a community of cocktail enthusiasts with monthly bar takeovers, inviting local favorites like Kaiju and Swizzle Rum Bar & Drinkery to bring their own mixology twists. “At the end of the day, it’s about elevating Miami’s cocktail scene,” Stern says. “We’re thrilled to collaborate with other bars to celebrate the talent here.”
